The chocolate cream and chocoate bar product lines are starting points. Our long term goal is to achieve a sugar/fat ratio lower than 25%, if not lower.
Our formulations work with, and without, the presence of the main coca alkaloid. Without the main coca alkaloid, decocainized coca leaf extracts can be sold anywhere where CocaCola is sold (which is still manufactured using decocainized coca leaves). To make the darkest, while still pleasant-tasting, dark chocolate in the world - 97% cacao - you mix 300 grams of cacao mass/liquor, 1.5 teaspoons (7.5 ml) of coca leaf extract, 5 grams (6 bags) of sodium cyclamate (one of the least bitter artificial sweeteners) and 0.25 teaspoons of sodium propionate (an anti-molding agent for chocolate food products that also adjusts acidity a bit). Sugar-Free Hot Chocolate PowderAvailable now is a hot chocolate drink powder, comprising unsweetened cocoa powder (for example, Hershey's) and decocainized coca extract (from ENACO), in a ratio of 6:1 cacao:coca, along with flavorings such as salt and vanilla. Two tablespoons in a cup of hot water creates a delicious hot chocolate drink. The technology is available for licensing, or the mixed powder can be purchased in volume quantities (either with a KukaXoco label, or for private labeling).
No-Added Sugar Chocolate MilkBy adding our Sugar-Fee Hot Chocolate Powder to regular milk, one can manufacture a chocolate milk with no added-sugar (typical chocolate milks have twice as much sugar as regular milk). 30%-40% Sugar/Fat Chocolate CreamGiven that chocolate creams are over 90% sugar/fat, KukaXoco's chocolate cream is a significant breakthrough in healthy chocolate tecnhology. KukaXoco chocolate cream comprises unsweetened cacao, decocainized coca extract, added butter/fat and sugar, in a ratio of 220:35:80:40. The technology is available for licensing, the mix of cacao and coca powders can be purchased in volume quantities, or KukaXoco chocolate cream can be purchased in volume quantities.
Sweetener-Free Chocolate BarIn November 2016, working with the Terra Nostra organic chocolate company in Lima, Peru, KukaXoco produced its first sugar-free, sweetener-free dark chocolates bars, comprising 97% cacao mass and 3% coca extract. The technology is available for licensing, and packaged chocolate bars are availabel in volume quantities.
